This is not due to lack of food but due to improper food choices, irregular eating habits, and neglect of the principles governing diet. Modern nutrition often focuses on calories and nutrients alone, whereas Ayurveda views food as a dynamic force that influences digestion (Agni), body tissues (Dhatu), mental health (Manas), and vitality (Ojas). This holistic understanding makes Ayurvedic dietetics very relevant even today.The book begins with the basic concepts of food and digestion, including the role of Agni and Avastha Paka, and gradually moves towards the practical rules of eating (Aharavidhividhanam). It discusses the eight important factors that influence the effect of food, along with guidelines related to quantity, timing, compatibility, and the eating environment. Special importance is given to Viruddha Ahara, which helps in understanding how improper food combinations contribute to disease.

Dr.Anjitha VS worked as an Assistant professor in the department of Samhita and Siddhanta in Maria Ayurveda College and Hospital, Attoor. She completed her UG degree - BAMS from Government Ayurveda College and Hospital, Kottar in 2017 and MD in the department of Samhita, Samskrita and Siddhanta from Government Ayurveda College, Trivandrum. Being passionate in the subject, she has chosen the research topic of Ayurvedic Dietetics for PG Dissertation and analysed the topic in the practical application also. This intrigued her to publish this book. She has also published research articles and presented paper presentations in reputed platforms.
Dr. Suparya G. S. is currently working as an Assistant Professor in the Department of Agadatantra at Maria Ayurveda Medical College, Attoor, Tamil Nadu. She completed her Bachelor of Ayurvedic Medicine and Surgery (BAMS) from Government Ayurveda College, Thiruvananthapuram in 2017 and went on to pursue her postgraduate studies in Agadatantra at the same institution, which she completed in 2022. Currently, she is pursuing her PhD at Glocal University, Uttar Pradesh. Dr. Suparya has published several scholarly articles in reputed journals and is deeply passionate about Ayurveda, with a keen interest in advancing both its academic and clinical dimensions through teaching, research, and writing.
